Sugar Gingerbread

1/2 cup (4 oz) softened butter
1-1/2 cups (12 oz) sugar
1/2 cup (4 oz) cream
2 teaspoonfuls ground ginger
1 scant teaspoonful bicarbonate of soda (baking soda)
Enough flour to make a soft dough (recommend 3 cups, or 1 lb, 8 oz flour)

**Note, this gingerbread is yellow in color and is similar to sugar cookies.

In a medium mixing bowl beat butter and sugar together. Add ground ginger and cream.

When smooth, add bicarbonate of soda and 1 cup (8oz) of flour.

Add the remainder of the flour until dough begins to pull away from the bowl. Chill for 2 hours.

Roll out the dough using powdered sugar and cut into shapes. Bake at 350 degrees F until firm. Cool and frost, if desired.
